It's been over half a year since the historic flooding in August 2016, and 80 year old Ruby Brumfield is still displaced from home! Ruby is the sister of missing person, Barbara Ann Blount. Tragically, like so many others, 80 year old, MawMaw Ruby lost just about everything in the historic flooding in Louisiana in August 2016. Until the flood, Ruby had lived on her lot for 47 years (since 1970) in her old 1968 mobile home trailer. Ruby was blessed to have survived the flood waters being rescued by boat with her two, young, great-granddaughters in tow. Then the next five days Ruby and the girls, without any way of communications, were shuffled from shelter to shelter as each one continued to flood, and family members frantically searched and prayed to find them safe. Prayers were answered and Ruby and the girls were finally located (more here); However, Ruby still remains displaced from her home by the flood waters to this very day. Her trailer was a total loss. After the flood, FEMA came out and told Ruby that her old 1968 trailer was only worth $10K, and because she didn't have at least $17K worth of damage (b/c her trailer wasn't worth that much), she didn't qualify for a FEMA trailer.


Ruby has always taken care of others her whole entire life, and now she needs help herself, but Ruby is not one to ask for help; therefore, family has started this campaign for her. Ruby is a survivor. Throughout her life, Ruby has suffered tremendous loss, and great hardship. She lost two of her sisters, including missing person Barbara Ann Blount, her husband, and sadly even her two sons, as well. And more. Plus now, she has lost her home and the majority of it's contents, too.


MawMaw Ruby is always doing for others, placing their needs before her own. Ruby raised not only her children, but that of others, as well, and without any assistance. Ruby and her family are salt of the earth, good people, so very kind, understanding, and generous with what they have; However, as rich as they are with love, they have very few funds. And unfortunately, the family, and extended family, simply don't have enough monies alone to help MawMaw Ruby replace her flood destroyed mobile home. It's been over half a year now, all avenues have been exhausted, and Ruby is still displaced from her home. And that's why we're going public to ask for help.


Please help sweet, MawMaw Ruby get back home to her lot, where she misses her neighbors, friends, yard, plants, and gardening outdoors. ANY donations, big AND small, are very much greatly appreciated, and are sure to help! SHARING this campaign to help spread the word and raise funds for Ruby is also very much greatly appreciated! ANY & ALL HELP is VERY much appreciated and will be a HUGE blessing to Ruby, and will go a long way in helping bring Ruby home!


All funds raised will go directly to MawMaw Ruby Brumfield from Denham Springs, LA 70706. The funds raised for Ruby will be used to purchase a replacement mobile home trailer, and expenses related to that purchase (such as removal of what's left of the old trailer, delivery and set-up of the new/used trailer, tax, title/license, etc.).


Ruby has been looking for an inexpensive 16 foot, single/wide, mobile home trailer to replace the one she had that was a total loss.

Target Data Breach Settlement - You May Be Owed $$

The following is an email I received today that I thought I'd share with my readers:  


If You Shopped at Target from November 27 through December 18, 2013, or Received Notice That Your Personal Information Was Compromised, You Could Get Money for Losses from a Data Breach Settlement.


A Settlement has been proposed in lawsuits against Target Corporation ( “Target” ) relating to Target customers whose credit/debit card information or personal information was stolen as a result of a data breach that was first disclosed on December 19, 2013 ( “Target Data Breach” ). Target’s records show you are included in this Settlement and may be eligible for a cash payment. Visit www.TargetBreachSettlement.com for more information or to file a claim.


Who is included in the Settlement? You are a member of the Class if: (1) you shopped at a Target store and used your credit or debit card from November 27-December 18, 2013; (2) you provided your contact information to Target before December 18, 2013; or (3) your bank, credit card company, or other financial institution issued you a new credit or debit card shortly after December 2013 and informed you that your old card may have been compromised. If you received a notice directly about the Target Data Breach, you are a Class Member.


What does the Settlement provide? The $10 million Settlement Fund will provide payments to consumers who have had losses caused by the Target Data Breach. If you are included, you can choose between two types of payments:


• If you have documentation, you can receive reimbursement of losses up to $10,000. These losses include unauthorized, unreimbursed charges; certain costs and fees; and lost or restricted access to funds among other things.


• If you do not have documentation, you may be eligible for an equal share of the Settlement Fund remaining after payment of claims for documented losses and service payments. For example, if the total of service payments awarded by the Court plus documented claims adds up to $1 million and 300,000 Settlement Class Members submit valid claims without documentation, you will receive $30 from the Settlement Fund. The amount of actual payments will depend on the amount of claims received.


How can I get a Payment? Submit a Claim Form online or by mail by July 31, 2015. The payment amount you receive will be based on the amount of losses you can document and/or the amount of claims filed.


What are my rights? Even if you do nothing, you will be bound by the Court’s decisions. If you want to keep your right to sue Target yourself, you must exclude yourself from the Settlement by July 31, 2015. If you stay in the Settlement, you may object to it by July 31, 2015.


The Court will hold a hearing on November 10, 2015 to consider whether to approve the Settlement, a request for attorneys’ fees and costs up to $6,750,000 to be paid by Target, and service payments of up to $500 each for the Settlement Class Representatives (up to $1,000 each for the three Class Representatives who were deposed). You or your own lawyer may appear and speak at the hearing at your own expense.

WARNING: Progressive Insurance is a joke!

*** WARNING: Progressive Insurance is a joke.  I strongly recommend NOT doing business with them. ***


I previously thought Progressive Auto Insurance was a good company, until a woman with that insurance recently struck my stopped vehicle in a store's parking lot, and now I know otherwise. Progressive is a joke. I'm so very glad that I'm not with them. And after what I've learned, I'll never do business with them. They have been difficult to deal with; and despite the store's parking lot surveillance video evidence, and witness statement(s), plus their insured motorist admitting fault, they are refusing to cover 100% of the damages caused to my vehicle by their at fault insured motorist.

3 Tips: How to Save $$ at CVS!

Yesterday at CVS I got all of this, including 2 gallons of milk, 3 cases of bottled water, a tube of toothpaste, and more, for only $7.34!


Tip 1.  If you don't already have a free CVS savings card, I strongly suggest you get one.  It's quick and easy to get one.  Simply ask the cashier for one next time you're in the store, or go online to cvs.com.  Also, every time you visit CVS make sure you scan your savings card at the coupon kiosk for extra $ saving coupons when you arrive.


Tip 2.  And get on their emailing list, too. That's how I get the high value coupons.  On this shopping tip I had two high value coupons.  One for $5 off, and another for $15 off (you'll see it on the receipt below as a $20 off CVS coupon).  I received those two coupons via email.  For the $15 off coupon I did however have to complete a short survey.  Don't worry, CVS will not spam you.  And you can set your email preferences.  


Tip 3.  Print CVS coupons rather than sending them to your savings card because CVS will accept expired coupons.  If you send the coupons to your savings card they disappear after they expire & then cannot be used.  And don't forget to check your receipt(s) for coupons, too.  On this shopping trip, in addition to other coupons printed on my receipt, I also received a coupon for $2 off my next purchase.  :)

Tragically, I've noticed that many of people have recently posted on Facebook about suffering the loss of a loved one (and my heart & prayers goes out to those families).  And just today, I learned some very helpful money saving information about funeral services that I didn't know before, and I want to share the information with you...


When you face a death in your family - and you will - before you EVER speak to a funeral home, or cemetery, speak first to a funeral negotiator.  The loss of a family member is tragic in and of itself so why compound your sorrow with the burden of debt?


For example:


Did you know you do not have to purchase a coffin from a funeral home?  You can acquire one online.  Walmart.com, of all places, is one of many sources to purchase a coffin.  Why pay $7,000 for something you can get the same thing for at $1,500, or less?  


Did you know you do not have to hold funeral services in a funeral home?  You can hold your loved ones services in a church at little or no cost.  


Did you know you do not have to pay to have your loved ones grave dug?  You and/or friends/family can dig his/her grave yourselves.  What an incredible act of love that is.  


I have a friend that has personally helped a family dig a loved one's grave, and used the services of a funeral negotiator.  His mother's funeral services were held in a church at no cost to his family.


To all of you whom have lost a loved one, my heart goes out to you and your families, and I sincerely hope this valuable information will ease some of the financial burden that often accompanies your loved one's final resting arrangements.

Frugal Tip of the Day! Never buy chip clips again! Recycle disposable hangers into chip clips! Use to keep items securely closed. I use mine on cereal bags, chip bags, crackers, bread, dog food bags, everything! To make cutting the ends off easier, I use my garden sheers/lobber.

Easy, Delicious, Fried Pickles!

Easy, delicious, fried pickles!  Below is what I used when I made my fried pickles; however, you can choose to use, or not use, whatever you like.  Feel free to add, or eliminate, anything; as long as you have at least flour or cornmeal, and 2 or 3 other seasonings, plus some black pepper and salt of some type, everything will turn out fine.  Basically, use what you have available on hand.  Don't be afraid to experiment; this dish is very forgiving.


 

Ingredients:

  •  Pickle slices, drained & lightly patted dry with paper towels
  • 1/3 cup yellow cornmeal
  • 1/3 cup all purpose, or bread, flour
  • 1/3 cup seasoned breadcrumbs (I used Italian)
  • 1/2 tbs. paprika
  • 1/2 tbs. chili powder
  • 1/2 tbs. ground cumin
  • 1/2 tbs. ground mustard
  • 1/2 tbs. black pepper
  • 1/2 tbs. onion powder
  • 1/2 tbs. Cajun/Creole seasoning
  • 1/2 tbs. garlic salt
  • 1 tbs. garlic powder
  • canola, vegetable, or peanut, oil, for frying (I used canola oil) 


Instructions:

  1. Mix together dry ingredients, and slice pickles if necessary.
  2. Heat oil in a large, heavy, skillet over medium heat.  I used a cast iron pan about 2 inches deep, with about 1 inch of oil in it.
  3. While oil is heating up, lightly pat the pickle slices dry with paper towels.
  4. In small batches, coat pickle slices in dry mixture.
  5. Fry the pickle slices in the hot oil for about 2 to 3 minutes (total cooking time) until golden brown on each side.  Note: Don't put too many pickles in the oil at once or the oil temperature will drop.  Do them in small batches.
  6. Place fried pickles on a plate with a paper towel to drain.
  7. Serve immediately with your favorite dipping sauce.  We used Buttermilk Ranch Dressing.



Notes: I made these in four different batches, experimenting with each one as I went along.  As you can see by the difference in the three batches in the photo above, I fried the pickles three different ways.  1) I tried not patting them dry first, and 2) patting them dry next, and I also 3) tried an egg batter dip w/ one batch.  What I discovered is that they came out best when patted dry first, and without an egg/wet batter.  When they were not patted dry, they were still good but had somewhat more of a stronger pickle taste.  I did not prefer them with a wet/egg batter (the darkened quickly, and did not taste as good).  See more pics, here.  **You can use any variety pickles you like w/ this recipe; however, I found that dill pickles turn out best.

Lemon Pepper Chicken

Ingredients:

4 large boneless skinless chicken breasts (approx. 2lbs.)

1/2 cup all-purpose flour

1/2 teaspoon salt

6 teaspoons lemon pepper seasoning

1/3 cup butter

2 lemons, sliced

4 tablespoons lemon juice

Hot cooked rice, or pilaf (optional)


Directions

- Place the chicken breasts in a large Ziploc bag, and cover w/ a dish rag to prevent splatter.

- Lightly pound until about about 1/4 to 1/8 inch thick, and remove from bag.

- In a large bowl, combine the flour, salt, and 3 tsp lemon pepper.

- Coat the chicken breasts with the flour mixture.

- Sprinkle chicken breasts with remaining 3 tsp lemon pepper.


In a large skillet cook the chicken breasts in the hot butter over medium-high heat for about 3 minutes on each side or until brown and no longer pink.  Remove chicken from skillet.  Add lemon slices to skillet; cook for 2 to 3 minutes or until lightly browned, turning once.  Return all of the chicken to the skillet, overlapping chicken breasts slightly.  Drizzle lemon juice over the chicken breasts.  Cook for 2 to 3 minutes more or until pan juices are slightly reduced. Serve chicken, lemon slices, and pan juices over hot cooked rice or pilaf, if desired.

Easy Root Beer BBQ Chicken!

If you're looking for an easy, tasty, slowcooker recipe, this one is for you!  Try this super simple, yummy, Crockpot Root Beer BBQ Chicken recipe! 





Ingredients:

- approx. 2 lbs boneless skinless chicken breasts (I used 3 large chicken breasts)

- 2 tsp onion powder

- 3 tsp garlic powder

- 3 tsp chili powder

- 2 tsp black pepper

- 1 tsp salt 

- 3 tsp parsley flakes (optional)

- approx. 1 & 1/4 cup BBQ sauce - any variety

- approx. 1 & 1/4 cup root beer - any variety


Directions:

- Combine dry ingredients

- Sprinkle dry ingredient mixture on each chicken breast 

- Pour 3/4 cup root beer, and 3/4 cup BBQ, in Crockpot and stir

- Place seasoned chicken breasts in Crockpot

- Pour remaining BBQ sauce (approx. 1/2 cup), and root beer (approx. 1/2 cup) on top of seasoned chicken breasts in Crockpot

- Sprinkle parsley flakes on top (optional)

- Cook on low heat setting for approx. 8 hours (give or take an hour or two)

- Using two forks, shred the chicken in the sauce mixture, and cook an additional 30 minutes before serving


** All meaurements can be adjusted to taste.  Don't forget the buns (I used onion rolls).

Yummy Fried Apple Cinnamon Rings!

I came across this recipe on Facebook.  I tried it, and it turned out great; so I thought I would share it with you!  SOURCES:  Photo credit & adapted recipe found here.  Original recipe found here.


Fried Apple Cinnamon Rings!




For the Apple Rings:  

4 large apples - ANY variety  (I used green apples, not pictured)

1 cup flour

1/4 teaspoon baking powder

2 tablespoons sugar

1/4 teaspoon salt

1/4 teaspoon cinnamon

1 large egg, beaten

1 cup buttermilk

approx. 1 cup of either canola or vegetable oil for frying


For the cinnamon sugar topping:

1/2 cup sugar

1 tablespoon ground cinnamon


Instructions:

In a large bowl, combine the flour, baking powder, sugar, salt and 1/4 teaspoon cinnamon. Set aside.  In a small bowl combine the egg and buttermilk.  In a third dish, make your cinnamon-sugar topping by combining the sugar and cinnamon.  Set that aside also.


Next, slice the apples into 1/4 inch thick slices, and use circle biscuit cutters in graduated sizes to make rings out of each slice.  Discard the center circles containing the apple core.


Heat the oil in a frying pan over medium heat to 350°F.  As the oil heats up, combine your first two bowls, of the liquid & dry ingredients, together.  This will be your batter.  Dip the apple rings in and out of the batter one at a time, remove any excess by tapping the rings against the side of the bowl.


Fry the rings in small batches, turning them to ensure browning on both sides.  Once the rings are golden & crispy, quickly transfer them, one by one, into the cinnamon-sugar mixture, coating evenly on both sides.  Serve warm (w/ a drizzle or small pot of caramel for dipping, if desired).


Note: Apples go a long way in this recipe.  And this dish doesn't keep well, so only make what you can eat right away.  Instead of using 4 large apples, I used about 6 small ones.  Half way through the recipe I realized I prepped more apples than we could eat, so I ended up sharing half of them with the neighbors.  This was a tasty treat everyone enjoyed, so I'll definitely be making it again!

Delicious Sauerkraut Balls!

Just made these yummy Sauerkraut Balls!  

Even non-sauerkraut fans will love this recipe! :)


Here's the recipe...


Sauerkraut Ball Mix:

16 oz. bulk pork sausage, crumbled

1 large finely chopped yellow onion

1 - 2 pound bag of fresh sauerkraut, well-drained, and squeezed dry.

1 freshly grated green apple **optional, but if used, squeeze it dry w/ the sauerkraut.

5 tablespoons of Italian Panko/Italian Breadcrumb Mix (see below for portions)

1 - 8 oz. package cream cheese

5 tablespoons of snipped fresh curly parsley (finely cut)

5 cloves of fresh garlic, cleaned and pressed (or finely grated or minced)

1 1/2 tablespoons prepared yellow mustard

1/2 teaspoon garlic salt

1 teaspoon freshly cracked black pepper


Breading:

Roughly 1 cup all-purpose flour

4 well beaten eggs

1/2 cup milk

Roughly 1 3/4 cups of Italian Panko/Italian Breadcrumb Mix (8ozs. Italian Panko mixed with about 5 ozs. Italian breadcrumbs)


Directions

- In skillet, cook sausage and onions, drain and let cool.

- Add sauerkraut (& optional apple if used) and 5 tablespoons Panko/Breadcrumb Mix.

- Combine cream cheese, parsley, mustard, fresh garlic, garlic salt, and pepper.

- Stir the above combined ingredients into sauerkraut mixture.

- Let chill, it makes it easier to roll. Shape into 1 inch balls.

- Roll in flour. Whisk together eggs and milk. Roll floured balls in egg mixture, then in remaining panko/bread crumb mixture.

- Fry in oil until brown (I prefer Canola Oil, or Vegetable Oil). 


Note: If frying them in oil on the stove top, be careful not to fry them too fast, or your centers will be cold.  I prefer to fry mine in a FryDaddy (deep fryer) instead of in a pan on the stove top because they seem to cook more evenly and quicker that way; plus it's less messy, and in my opinion, a bit safer. 


* Makes about 2 dozen.  To reheat frozen sauerkraut balls, thaw first and bake at 425 degrees for about 10 minutes.


Note: This dish is such a crowd pleaser that I like to double the recipe when making it.
